Canned Food Really Doesn't Need Preservatives According to Chinese food standard GB 2760-2024, preservatives are not allowed in canned food products. After sealing, canned semi-finished products must be sterilized within 2 hours. Low-temperature sterilization is carried out at 80–100°C, and high-temperature sterilization at 105–121°C. At these temperatures, microorganisms cannot survive.

After high-temperature sterilization, the cans are cooled below 40°C. This creates negative pressure inside the container, making the lid even more tightly sealed. Through this process, no microorganisms remain inside the can, and microorganisms from the outside cannot enter. That is why canned food does not need preservatives.
